Francois Pralus now has his own plantation in Madagascar on the island of Nosy Be, also known as the "isle of perfumes". From Sao Tome by way of Brazil and Venezuela, Monsieur Pralus has personally selected cacao for the plantation from the finest origins in the world. The beans are grown, harvested, and fermented with care and then roasted and transformed into a delightful chocolate in his Roanne facility.
Our 100% bar is chocolate in its purest form. This means it has no sugar added, it's pure cocoa paste. Made from the same high quality cocoa beans as our Madagascar bar (Sambirano Valley), the extra long conche time gives roundness and lusciousness to this ultra high percentage bar.
Single plantation chocolate. Fresh nose, slightly minty and fruity, lots of bright acidity.
